Doctors often tell us to get more fruits and veggies into our diet. So here's any easy tip: Go meatless for one dinner a week using one of the recipes below or all 5 for a special occasion menu.
The main course: satisfying whole-wheat lasagna rolls stuffed with tofu (yes, tofu!). We've paired this protein-packed pasta with sautéed spinach and a refreshing pear, walnut and arugula salad.
And save room for dessert – 'cocoa-nut' bananas or chilled basil-cinnamon peaches are a sweet, low-calorie treat.
Want some wine with your meal? Italian reds are the perfect pairing. Chianti has a bright acidity that balances the lasagna's tomato sauce. If you prefer a bolder bottle, choose Montepulciano d'Abruzzo.
Arugula & Pear Salad
Pears bring sweetness and illness-fighting vitamin C to this colorful salad. And walnuts are a rich source of omega-3 fatty acids, protein, iron and calcium.
For added flavor, crumble on Gorgonzola cheese.

Preparation time: 10 minutes
Ingredients
For the dressing:
2 tablespoons finely chopped shallots
3 tablespoons vegetable broth
3 tablespoons extra-virgin olive oil
1-1/2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
Freshly ground pepper, to taste
For the salad:
1/2 cup chopped walnuts
2 firm red Bartlett pears
5 cups butterhead lettuce (Bibb or Boston), torn into bite-size pieces
4 cups arugula, trimmed
Preparation
To prepare dressing:
1. Whisk shallots, broth, oil, vinegar, mustard, salt and pepper in a small bowl.
To prepare salad:
1. Toast walnuts in a small dry skillet over medium-low heat, stirring, until fragrant, 2-3 minutes. Transfer to a small bowl and let cool.
2. Just before serving, cut pears into 16 slices each (cutting them earlier risks that air exposure will turn slices brown). Place in a large bowl. Spoon on 1 tablespoon dressing and toss to coat. Add lettuce, arugula and remaining dressing; toss well. Divide among 8 plates. Top with walnuts.

Crumbled tofu replaces ricotta in this Italian-style vegetarian entrée. It's kid-friendly but also fit for company. The recipe calls for Kalamata olives, which lend a wonderful, briny flavor to the filling.

Ingredients
12 whole-wheat lasagna noodles
1 tablespoon extra-virgin olive oil
3 cloves garlic, minced
14-ounce package extra-firm water-packed tofu, drained, rinsed and crumbled
3 cups chopped spinach
1/2 cup shredded Parmesan cheese
2 tablespoons finely chopped Kalamata olives
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
25-ounce jar marinara sauce, preferably lower-sodium, divided
1/2 cup shredded part-skim mozzarella cheese
Preparation
1. Bring a large pot of water to a boil. Cook noodles according to package directions. Drain, rinse, return to pot, and cover with cold water until ready to use.
2. Meanwhile, heat oil in large nonstick skillet over medium heat. Add garlic and cook, stirring, until fragrant, about 20 seconds. Add tofu and spinach and cook, stirring often, until spinach wilts and mixture is heated through, 3-4 minutes. Transfer to a bowl; stir in Parmesan, olives, crushed red pepper, salt and 2/3 cup marinara sauce.
3. Wipe out pan and spread 1 cup of remaining marinara sauce in the bottom. To make lasagna rolls, place a noodle on work surface and spread 1/4 cup of tofu filling along it. Roll up and place the roll, seam-side down, in the pan. Repeat with remaining noodles and filling. (Tofu rolls will be tightly packed in the pan.) Spoon remaining marinara sauce over rolls.
4. Place pan over high heat, cover, and bring to a simmer. Reduce heat to medium; let simmer for 3 minutes. Sprinkle rolls with mozzarella and cook, covered, until cheese is melted and rolls are heated through, 1-2 minutes. Serve hot.

Preparation
1. Combine water, sugar, lemon zest, lemon juice and cinnamon stick in a large non-reactive saucepan; bring to a simmer over medium-high heat, stirring often, until sugar dissolves. Add peach halves. Return to a brisk simmer, cover pan and simmer, turning peaches occasionally until tender when pierced with a skewer (or paring knife) and skins are loosened, 20-25 minutes (depending on ripeness). Use a slotted spoon to transfer peaches to a plate.
2. Return liquid to a boil and cook until reduced to about 3/4 cup, 10-12 minutes. Remove from heat, stir in basil, and let cool to room temperature, about 40 minutes.
3. Slip off and discard peach skins. Place peaches in a storage container and strain cooled syrup over them. Cover and chill for at least 4 hours.

Do I understand and accept his late arrival to the dance floor? Not really. But the man who won the Academy Award for the screenplay of Milk does.
Dustin Lance Black is quoted in the Atlantic article as saying. "Ken represents an incredible coup for the American Foundation for Equal Rights. As a victorious former presidential campaign manager and head of the Republican Party, Ken has the proven experience and expertise to help us communicate with people across each of the 50 states."
Dustin is thrilled! Part of the story behind Mehlman's revelation is his interest in raising funds for the American Foundation for Equal Rights, the organization that hired Ted Olson and David Boies to file a lawsuit in a successful (so far) attempt to overturn Prop. 8. Mehlman is the co-chair of a swanky $5,000 per ticket party coming in late September that also features Republican Mary Cheney, mother of a lesbian, Democrat Dick Gephardt, father of a gay, and Michael Huffington, the bisexual ex-husband of Arianna Huffington. This sounds like a real swinging ken party.
Odd, isn't it? Mehlman was the king of the Republican Party and the campaign manager for George W. Bush's re-election bid -- and he was in the closet the entire time. Fast forward to the present and he's out of the closet raising money to help defend the case recently decided by U.S. District Court Judge Vaughn Walker, a Reagan-appointed jurist who isn't exactly out of the closet but everyone knows he is light in his loafers.
The inconsistent coverage of Mehlman's secret and Walker's so-called "open secret" didn't escape the jaundiced eye of writer and radio host Michelangelo Signorile. Signorile Tweeted Wednesday night, "Judge Walker was outed for allowing gays to marry. Ken Mehlman was protected for stopping them. But it's a 'liberal' media, right?"
Need more evidence of the media's protection? Perhaps you recall in November 2006 when Bill Maher appeared on The Larry King Show and made a remark about Mehlman being gay which was edited out the broadcast. The gay is a very sensitive thing to discuss...unless the conversation is about stripping the rights of gays. Then it's not so hard to talk about it.
Give me a break.
As a side note: Tonight at 9 pm at Harvey Milk Plaza (17th and Market) there will be a rally followed by a procession up Market Street to Church Street to speak out against violence against LGBT people. A recent gay bashing on MUNI has earned much attention and raised concerns about safety in the queer community. Try to attend and spread the word.
Ken Mehlman should find a way to attend event like this and actually mingle with the common people now that he's fallen off the "special people" horse. I won't hold my breath.

The Formal Boycott began this past weekend. I stopped shopping these stores - even though I want a new washer/dryer and new clothes for the Fall. I would not purchase "Blood Diamonds," nor should a person / organization be contributing funds to both Hitler / Nazi's and the Jews at the same time! Obviously giving money to the Jews and not Hitler/Nazi's is the right thing to do. Hence, these companies violated my trust and well-being. They gave money to my enemy who would terminate me from my job, deny me housing and send me to a Internment camp. Therefore, goodbye Target and Best Buy! The CEO's of these companies have been insensitive to our reaction and do not even comprehend their actions! What takes so long to "fire" these Neanderthals?
